Poke 5 or 6 yellow sweet potatoes (not the orange variety!) with a fork and bake as you would regular potatoes, about 1 hour and 15 minutes at 375 degrees.

Scoop the cooked sweet potatoes into a casserole dish and add:

1/2 stick butter
6 tablespoons honey
juice of 4-5 limes
a little salt and pepper

Mash and stir thoroughly. Bake covered in the casserole at 350 degrees for 20 to 30 minutes.
